HERE IS YOUR VERY OWN WAY TO MAKE A RAINBOW CAKE FROM SCRATCH! Cake Batter; 4 cups flour 4 teaspoons baking powder 1 teaspoon salt 1 cup butter 2 cup caster sugar 6 large eggs 4 teaspoons vanilla essence 1 2/4 cup milk Meringue frosting; 8 egg whites 4 cups caster sugar 1 teaspoon vanilla extract Blue, green, yellow, orange, pink and red food colourings 1/2 teaspoon 100s and 1000s STEP 1: Preheat oven to 180°C/160°C fan-forced. Grease a large cake pan. Line base and sides with baking paper. STEP 2: In a bowl, combine flour, baking powder and salt with a wire whisk. Beat butter and sugar together until light and fluffy. Beat in eggs one at a time, adding the vanilla and mixing until completely combined. Slowly add flour with the milk. STEP 3: When all the ingredients are combined, divide batter between 4 bowls. Colour 1 portion blue, 1 portion green, 1 portion red and remaining portion yellow. STEP 4: Spread a small amount of the first portion into the prepared cake pan. Repeat with remaining 3 portions. STEP 5: Smooth surface. Bake for 45 minutes, or until cooked through. Stand cake in pan for 5 minutes. Turn out onto wire rack to cool completely. STEP 6: Make frosting: Place eggwhites, vanilla, sugar and 1/4 cup cold water in a large heatproof bowl. Whisk to combine. STEP 7: Place bowl over a saucepan of simmering water. Using an electric hand mixer, beat the eggwhite mixture for 15 minutes or until stiff peaks form. Remove bowl from heat. Beat until cooled. STEP 8: Place first cake on board. Spread with 1/2 cup frosting. Top with second layer of cake. Repeat with remaining frosting to third and fourth cakes, using 1/2 cup frosting for each layer. Spread remaining frosting over top and side of cake. Sprinkle with 100s and 1000s. Serve.
