HOME MADE MASAL DOSA This Recipe is for making 10 to 11 Nos. of Masal Dosa and this recipe is 3 stage. 1. DOSA RECIPE. 2.CHUTNEY RECIPE AND 3.POTATO(BATATE) BAJI RECIPE. 1.DOSA RECIPE: Ingridients:- Rice(Dosa White Rice, Poli Tandulu or Dappakki)-250grams(Don’t use Sona Masoori Rice) Urid Dal (udha dali) – 50 grams Menthe(Metti) – 1 ½ teaspoon. Salt to Taste Coconut Oil or Ghee for Dosa Frying. Chana Powder – 2 teaspoon Preparation:- Soak the rice, menthe(metti) and urid dal(udha dali) for 2 ½ to 3 hours and after grind it in mixi add sufficient water and make a dosa paste and add salt according to taste. Keep it for 10 to 13 hours before frying dosa, i.e., if make paste night , dosa is ready for making next day morning. Heat the dosa pan(non stick pan) add Coconut oil or Ghee to dosa pan. Add 2 teaspoon of Chana Powder(Chane Peet) to dosa paste and mix it well and pour in heated dosa pan(non stick pan) and spread round shape dosa with a help of steel sout (dowlo). 2.CHUTNEY: Ingridients:- Grated Coconut – ½ cup Green Chill – 2 to 3 Piece of Temrind pulp Salt to taste. Preparation:- Add all the ingridients in mixer and add little bit of water and grind it in mixer and prepare chutney. 3.POTATO(BATATE) BAJI: Ingriedients:- POTTATO(BATATO)- 3 Nos. ONION(PIYAVU)-2 Nos. Green Chilli – 4 to 5 Nos. Termeric Powder (Haldi Pitti)-1 teaspoon Coconut Oil – 5 to 7 teaspoon Mustard Seeds – 2 teaspoon Bay Leaves,(karbeva patti)- 5 to 6 Salt to Taste Preparation:- Cut the Potatoes(batato) and Onion(piyavu) into small pieces, means potato in small cube shape piece and onion small slice pieces. In a frying pan, put 6 to 7 teaspoon of Coconut oil and when oil is heated, add mustard seeds, karbeva pan(bayleaves) and green chilli pieces, and next add cutted potato(batato) and onion(piyavu) pieces. Add ½ cup of water and tight (close) the frying pan by cap and cook it for 10 minutes. Next open the frying pan cap and add 1 teaspoon of turmeric powder (haldi pitti) and salt (normally ½ to 1 teaspoon is enough) to taste and mix it well and again tight the frying pan cap (plate) and let it cook for again 5 to 8 minutes.. Baji is Ready. DOSA MAKING( Seee the step wise dosa frying photos):- 1. In a heated dosa pan (non stick pan) add oil and when heated pour the dosa paste and spread round shape dosa with steel sout (dowlo) . 2. Turn this dosa back for frying both side and leave until colour change ( from white to light brown). 3. Again turn back the dosa (i.e,, original shape as in step No.1) and add 2 to 3 teaspoon of Chutney lightly spread it over middle of the dosa in round shape with a spoon. 4. Next put Patato(batate) Baji in the middle of the dosa with the help of steel sout( dowlo) see the stepwise photo) 5. Leave it fry for 1 minutes for making dosa crispy and next fold the dosa with steel sout/non stick wooden sout(kailatho) and transfer this dosa to plate( see the step wise photos). Masal Dosa is ready for Eating.
