HOT APPLE PIZZA! (Makes one 10inch round pizza) For the base: 6oz strong white flour 1oz butter/marg 1 tsp quick yeast (available in sachets in most supermarkets) 4 tbsps apple juice For the topping: 2 medium cooking apples 3 tbsps of apple juice 2oz raisins ½ tsp cinnamon ( I used a bit more but we really love cinnamon in our house) 1 tbsp of sugar 3 eating apples 2 tbsps lemon juice 1 heaped spoon of brown sugar. Heat your over to 200C, 400F, Gas mark 6 1. Sift the flour into a bowl, add butter/marg. Rub butter and flour with fingers until it looks like breadcrumbs. 2. Put apple juice into a pan and heat a little to make it warm. Add it, and the yeast to the bowl and stir well. 3. Continue to stir until you get a soft dough which doesn’t stick to sides of the bowl. Squeeze it to make a ball. 4. Sprinkle flour onto a clean, dry work surface. Knead the dough until it is smooth and stretchy. 5. Grease a baking tray ( I used baking paper instead). Roll the the dough out into a 10inch circle approx. 6. Pinch the edge of the dough to make a rim, them cover in cling film. Put in a warm place for 30 mins. 7. Peel the cooking apples and quarter. Cut out the core then slice as thinly as you can. 8. Put the sliced apples into a pan. Add the apple juice and cook them with a lid on for 15mis until the apple is very soft. 9. Take the pan off the heat and stir the apple to make a smooth sauce/puree. Add raisins, sugar and cinnamon. 10. Turn the oven on. Peel eating apples and quarter. Slice them finely and sprinkle the slices with lemon juice. 11. Spread the puree over the dough with a spoon. Arrange slices of apple on top, overlapping them a little. 12. Sprinkle the pizza with brown sugar. Put it into your over for about 15 mins or until the dough is golden. Have fun and enjoy! xxx
