Happy Birthday to me! Happy Birthday to me!... Wait... what you mean I dont get cake! Dammit! Alas, tis be true. Not enough room in my eating plan for cake. But that’s ok... I have the next best thing. This is a recipe that I have previously posted, however this is now my favourite combination. And it’s my birthday after all! Layered Jelly, Custard & Fruit! 200g blueberries (I used Nanna’s frozen) 200g strawberries (I used Nanna’s frozen) 2 x sachets Aeroplane Lite Jelly (any flavour will do) 125g Well & Good Instant Custard Powder (GF & DF) 175ml Skim Milk 175ml cold water I made this recipe in the Tupperware Jelly Ring, but you could layer it in any mould or bowl that you have. Layer 1 Blueberries and 1 x sachet of jelly. Make the jelly on only 1 cup of boiling water. Put the blueberries into the mould, allow the jelly to cool to room temp and then pour it over the blueberries. Put it into the fridge to set. Layer 2 Once Layer 1 is set. In a bowl, whisk up the custard powder (about half the packet) and the milk and water. You could use a milk-alternative if you want to keep it dairy-free. Whisk fast and within minutes the custard will be nice and thick. Use a spoon/spatula to put it into your mould and spread it around. Put it back into the fridge to chill. Layer 3 Again make the sachet of jelly with only 1 cup of boiling water. Place the strawberries onto the custard layer and then when the jelly has cooled, pour the jelly over. Put it back into the fridge to set. I did this last night (over only a few hours), and when it came to dessert time, it just popped out of the mould. Tonight it served 4. Making each serve 178 cals, P 3.3, C 39.0, F 0.6
