Happy Friday Ronco Fans! The weekend is only a few hours away and that means it’s time to enjoy time with your family and friends. Here are some salsas to try using in season ingredients: Tomatillo Salsa (yield: 2 ½ cups) 6 medium fresh tomatillos 3 medium tomatoes, diced ½ c minced red onion 2 cloves garlic, minced 2 to 3 jalapeno chilies, seeded and minced 1 Tbsp minced fresh cilantro ½ tsp ground cumin ½ tsp salt Remove the husks from the tomatillo and dice. Place in a medium bowl with the tomatoes, red onion, garlic, chilies, cilantro, cumin, and salt. Toss to combine. *use within 1 day Tip: Tomatillos actually aren’t related to tomatoes at all. They have a slightly sour almost citrus taste that is very refreshing. This salsa works especially well with fish dishes. Fresh Strawberry Salsa (yields: 2 cups) 1 pint strawberries, diced by hand 2 Tbsp sugar 1 to 2 Serrano chilies, minced ½ c minced red onion 3 Tbsp raspberry vinegar 2 Tbsp minced fresh cilantro leaves ¼ tsp salt ¼ tsp freshly ground pepper Place strawberries and sugar in a bowl. Cover and refrigerate for at least 1 hour. Add Serrano, red onion, vinegar and cilantro; toss together lightly. Season with salt and pepper. Let salsa rest at room temperature for at least 20 minutes before serving. Tip: Great fresh spicy topper for chicken. Okay we can’t resist…here is one more! Sweet Corn Salsa (yields: 2 cups) 3 ears fresh corn ½ cup diced red onion 2 Serrano chilies, minced ¼ cup fresh lime juice 2 Tbsp vegetable oil 1 Tbsp maple syrup or honey ¼ tsp salt Cut corn kernels off cobs and place in a medium bowl. Toss the red onion, chilies, lime juice, vegetable oil, maple syrup or honey , and salt. Add more maple syrup or honey to taste. Refrigerate 1 hour and up to 2 days. Tip: The crunchy fresh taste of this corn salsa lends a special taste and texture to any spicy marinated fish, chicken, or beef.
