Happy Monday healthy people :-) I hope everyone has started their week off well. I managed to drag my b*tt up for gym early this morning, and after half an hour of CX WORX (core) and half an hour of Grit Cardio I literally had to crawl back into bed for a few hours.. but hey, at least I got up! It was a work filled weekend – just the way I want it until xmas when I have 2 weeks to chill and relax. I had a quiet Saturday night in with my sister watching Fight for Life, and eating delicious nutritious food. I was given two humongous frozen snapper fillets and advised to use it for ceviche so this was our main dinner served with avocado mousse, and a halloumi salad. Ceviche is one of my favourite meals, it is so easy to prepare and so fresh and delicious. Snapper Ceviche - 4c snapper, cut into 1cm cubes - juice 3 large lemons (think around 1 cup) - 2T EV olive oil - splash vodka (optional – but it was a Saturday night!) Mix these together and season, then add diced: - 1/3 cucumber - 1 large tomato - 1 large red chilli - 1 red capsicum - one small red onion - 2 large handfuls fresh coriander I also made a first trial run of some choc peanut butter vegan cheesecakes which tasted pretty awesome.. I have a few changes to make, then I will make a bigger one for Jam Organic Cafe so peanut butter nutters, watch this space! (And thanks for sampling Hayley x) The day has now become even better as my final exam result is in and I can say I have officially passed my Bsc Nutrition. I set myself a goal 3 years ago to finish this degree with only A grade passes (A-, A, & A+), and somehow despite all the ups and downs over the last few years, I have actually managed to achieve this goal! Goal setting has been something that I’ve only been doing for the past few years, and I really wish I had started earlier. It is so much easier to stay focused on things when you are working towards something in particular. I honestly don’t think I would have managed to get the marks that I did without this goal considering all the stress and time off I’ve had to take in the past year or so. One of my reasons for setting this particular goal was my brother. He was the smartest one in the family – even managing to get top of biology in 7th form while going through chemotherapy. He started a BSc degree but was unable to finish due to his illness. I decided that if he didn’t get to do it, then I would do my best to measure up to his academic standards. I know that if he was here he would be proud of me for pushing through and succeeding, and that makes me both happy and sad at the same time. Another goal I set was to graduate with an A+ average. Unfortunately, I didn’t quite get there as I was two A+s short, but at least I gave it a shot. The thing with goals is, even if you don’t quite meet them, the main thing is that you tried and gave yourself a challenge to work towards, so I’m not going to waste time feeling disappointed for not quite getting there. I now set goals for all areas of my life as it’s an easy way to stay focused and figure out which things are most important to me and which areas need the most of my time. If you havn’t tried it already, I would seriously encourage you to give goal setting a go. There’s no need to wait for the new year- we’ve still got 27 days of this year to make the most of!
