Have you ever gone to the Bakery and had this burning desire for a fantastic Apple Fritter but was hopelessly disappointed or had a craving at home but was detoured thinking about baking all day? I found this recipe and it is to die for! I usually make it when my mom bugs me for something sweet. I like it because I can make them in appetizer bite size or Large like the ones you see at the Bakery. Try it I think youll love them as much as I do. Apple Fritters Yield: Ingredients: Apple Fritter: 1 cup Flour (AP) 1/4 cup Sugar (Granulated) 3/4 tsp Salt (Sea or Kosher) 1 1/2 tsp Baking Powder 1 tsp Cinnamon (Ground) 1/4 tsp Nutmeg (Ground) 1/3 cup Milk (or Apple Cider) 1 egg 1 cup Apple (Granny Smith, Peeled, Cored & Brunoised or Diced) Glaze: 2 cups powdered sugar 1 1/2 tsp Apple Cider (or Milk) 1/4 tsp cinnamon Procedure: Apple Fritter: 1. Combine flour, sugar, salt, baking powder, cinnamon in a medium bowl, stir to blend. Add apple cider (or milk!) and egg until just combined and then fold in apple. Avoid over-stirring as it will make them tough. 2. Spoon enough Coconut oil into skillet so that it is approximately an inch and a half (1 1/2) deep, Heat oil on medium high. 3. To test the oil drop a tiny bit of batter into it, when the batter quickly floats to top and starts to sizzle, its time to cook the fritters. Carefully add dough by spoonful’s to the hot oil. Cook until brown, about a minute or so, then flip. Cook another 1-2 minutes, until both sides are browned. 4. Transfer briefly to paper towels to absorb excess oil, then transfer to cooling rack. Glaze: 1. Make glaze by stirring the cider, cinnamon and powdered sugar together in a small bowl. If you dont have cider, you can use milk. 2. Drizzle over apple fritters. Wait approximately 3 minutes for glaze to harden, then flip fritters and drizzle glaze over the other side. Best served warm.
