Havent made tortilla soup in awhile so I did. Wow. It was fantastic. No recipe, just cooking. Onions, green bell, garlic, jalapeño, poblano, tomato, corn tortilla, chicken stock.... Blended and brought back to hear with some frozen homemade creamed corn I wanted to use up, black beans, chili beans, and tons of tender seasoned chicken I shredded up. Cooked the chicken crock pot with a ton of seasoning and added the little liquid to the pot of soup too. Cumin, oregano, garlic powder, salt, maybe more cumin, etc... With lime and homemade Guac to top it. Even have hubby chips restaurant style (so I got some before the bag was gone!) and mmmmm. Waiting for strawberries to harden and enjoy one. Perfect dinner.
