Ingredients Shitake Mushrooms Basmati or rice of choice. Teaspoon of oil Tinned mackerel with terryaki sauce or if more time, fresh salmon, grilled or lightly fried. Lightly clean the mushrooms. Try shitake. You can get them very reasonable at Tesco currently. Rinse the rice and add kettle boiled water to it. Bring to bubble again and allow to cook for ten or so minutes. Meanwhile, fry the mushrooms. Rinse the rice. Bring to the boil again and discard excess water. Just add a tiny bit of salt as the mackerel sauce has salt. Toss the mushrooms atop of the rice and put to one side. You will later eat with the fish which you can heat in a small pot. Cost less than £4
