Hello FB family, Im an Army chef that loves to post pics and recipes geared towards healthy eating. Soon to be stationed at Macdill and looking forward to being a part of the group. Take care and heres the first post :) Easy family roasted chicken! INGREDIENTS: 1 Whole chicken (your choice in size) 1/2 cup ea. chopped celery, carrots and Spanish onion 2 garlic cloves (peeled) 1 cup red wine (merlot for savory or port for sweetness) either will do just fine 1/4 cup olive oil 1/8 cup white wine vinegar. (Regular distilled works to) 1 TBSP fine sea salt 1 TBSP black pepper 2 TBSP dry oregano 1 TBSP dry thyme 1 TBSP rubbed sage Cherry tomatoes and parsley for garnish DIRECTIONS: Rinse chicken off with water, pat dry and set aside. In deep baking dish toss in veggies ( celery, carrots and Spanish onion). Take the garlic and mash it with your palm, just enough to crack it and toss in the baking dish. Place chicken on top of veggies then pour wine/vinegar over it first. Lastly pour the olive oil on top of chicken evenly. Take all seasoning, mix them together in small bowl and generously rub chicken down. If you have some left over, mix it in with the wine mixture inside the baking dish. Bake chicken as directed on seal and enjoy. ( cooking times vary with each chicken and poundage) Enjoy and follow my Instagram for more great ideas @fit_to_inspire
