Hello! My mom bought me a PC for Christmas, swearing it would change how I cook- she was right! Tonights experiment: Burrito Bowls! So: rice and just a little less water than you normally would use in a rice cooker (Filipino finger method: 1/8 inch before your finger line), a splash of rice vinegar. Choose you meat (precooked shredded chicken tonight- Magoo asked for sausage next time) can of black beans (rinsed), can of corn (drained), onion (chopped), 2tbs minced/chopped garlic, can of diced tomatoes (mexican/Italian/or rotel-- with juice) 1 cup Taco Bell sauce... Or a packet of taco seasoning... Whatever floats your boat. If using dry seasoning, put it in before the tomatoes so it gets wet. I used 3 cups of rice, so 10 min at high pressure. Quick release after 5-7 minutes natural, stir and mix everything together. Serve with chopped lettuce, cilantro, sour cream, more taco sauce... Like chipotle, put what you like on it. Oh, shredded cheese!
