Here is a recipe for you to try this weekend: Italian Chicken Penne Dish Chicken Breast (Source of Protein) Spinach (Source of iron, folic acid, potassium, magnesium, Vit. K, Vit C, lutein Mushrooms, Diced (Source of protein, B-Vitamins, antioxidants) Spaghetti Sauce, Healthy Smart (Source of lycopene, tons of vitamins) Red Onions, Diced (Source of antioxidants, good source of quercetin, selenium) Parmesan Cheese (Source of potassium, calcium, iron, proteins, Vit. A) Oregano, Minced (Source of antioxidants, fiber, calcium, potassium, iron, magnesium) Whole Grain Penne Pasta (Source of fiber, B-Vitamins, Vit. E, Essential Fatty Acids, Unsaturated fats, phytochemicals) Galic, Minced (Source of manganese, Vit. B6, Vit. C, Selenium) Extra Virgin Olive Oil (Source of antioxidants, monounsaturated fats) Boil the penne pasta and drain, set aside and let cool down. In a skillet pan, heat up the olive oil. Add the chicken and the garlic to the pan, keep stirring while cooking the chicken. When the chicken is close to being done, we are going to add some more garlic, the spinach, mushrooms and onions. Saute and season with the oregano. Mix in the spaghetti sauce and heat up. Stir in the pasta, place into a serving bowl. Sprinkle the Parmesan Cheese over top and serve hot. This is a great dish, does not take long to prepare and is pretty simple. I understand that our lives are busy and we are looking for dishes that can be done quick. This is a perfect dish for that and it has tons of nutritional properties as you can see above. Check with your doctor first, just in case you are allergic to one of the items.
