Here is my first contribution to Monday Munchies.... Eggplant in mustard sauce ( shorshe begun...in Bengali style ) !!!! For this youll need: Eggplant, tomatoes, garlic n ginger paste, green chillies, mustard powder, khuskhus powder ( posto ), turmeric, salt, jeera pd, mustard seeds, cooking oil. First cut the eggplant ( brinjal ) as shown, and sauté with little salt in little oil in a non stick pan, till golden brown. Remove and keep fried pieces on paper towel. Then in same pan add some more oil, add mustard seeds in hot oil ( be very careful ), also add garlic- ginger paste, chopped tomatoes, slit green chillies and sauté for a while. In a small bowl mix 1 tsp mustard powder and 3 tbsp posto powder well, add 2 tsp or so water and make a nice smooth paste. When oil starts to separate, then add this paste along with turmeric, salt, jeera pd, and stir very well. Add a cup of warm water and mix. Then slip in the fried brinjal pieces. Stir, cover and cook for 8-10 mins. Garnish with cilantro and serve hot with rice.
