Here is rough but functional recipes for those interested: Whole bunch Celery 1 large Onion ( white or yellow) 2-4 Bell peppers (I used Red and green but any work) 3 quarts of chicken stock Chicken stock (no water used to make these beans) 3 lbs. Of red kidney beans ( camellia beans are best) Whole package of bacon 1/2 package Boneless ham hocks Smoked sausage (as much as you can stand) Flour Whole bunch of Garlic Ham bone Steens cane syrup Cayenne, salt, pepper, garlic powder, tonys , paprika Recipe: Soak beans the night before, add water as they soak up. Finely chop all veggies and set aside Chop up sausage in various sizes and pieces. Finely cope some of it. Chop up bacon into small pieces and throw in pot on medium high heat. Throw in finely chopped sausage. Brown and render fat, throw in about 2-3 tablespoons of flour and coat and continue to brown. Right before it looks like it is going to burn throw in a of the veggies. Cook down until onion is clear and then throw in ham hocks and let them cook a little. Season with tonys, paprika, salt, pepper, garlic powder and cayenne. After about 5 minutes of cooking throw in beans, chicken stock, ham bone and the rest of the sausage. Let it cook on medium heat for about 2 hours of a good boil. Add Steens to taste. Typically I put about 1/4 cup but it is based on taste. Lower heat but keep slow boil going for another 6-8 hours or until the beans starts to turn mushy. Stir occasionally. Serve over rice!
