Here is the Crockpot Chicken Corn Chowder recipe I made yesterday. It was easy to make and I doubled the recipe and it turned out delicious! Crockpot Chicken Corn Chowder Ingredients: 1/2 cup chopped carrots 1 cup milk, skim or low-fat if you choose 1 cup low sodium chicken broth 1/8 tsp. white pepper 1 onion, chopped 2 cloves garlic, minced 1 potato, peeled and cubed 1/2 lb. boneless, skinless chicken breasts, cut into 1 pieces 2 (15 oz.) cans creamed corn 1/4 cup dried potato flakes Instructions: 1. Pour everything in your crockpot. Cook on low for 6 hours. Check your potatoes and make sure they are tender. The chicken should also be cooked all the way through. 2. I found the chowder to be a little runny so at 6 hours I added some cornstarch and water and replaced the lid and let it cook another half an hour. It was perfect then! Serve with a chunk of hardy bread or a side salad.
