Here we go. Delicious Gluten-Free Banana Walnut Muffins. 2 cups almond meal 2 tsp baking powder 1 tbsp ground cinnamon 1/4 tsp ground all spice 1/4 tsp salt 3 over ripe mashed bananas 3 eggs 1 tsp vanilla extract 1 tbsp raw manuka honey 1/4 cup almond butter 1/2 cup walnuts 1 tbsp coconut oil, melted 1 tsp honey 1 tsp ground cinnamon 1. Pre-heat oven to 180. 2. Combine all the dry ingredients and whisk together. In another bowl, mix the banana, vanilla, eggs and almond butter. Whisk together until thick. 3. Combine the wet and dry ingredients and whisk together. Scoop the mixture into muffin tins about two thirds full. 4. Mix the walnuts, coconut oil, honey and cinnamon and sprinkle the mixture over the muffins. 5. Bake for 25-35 minutes. Take out after inserting a knife and it comes out clean. 6. Let the muffins cool for a few minutes and then enjoy!
