Here you go Helen Hutchinson😊 Coconut ice transformed to slow cooker style, as you asked😉😘😘 Coconut Ice🍥🍥🍥🍥 *125g copha 250g desiccated coconut 500g pure icing sugar 2 egg whites, lightly whisked 1/2 teaspoon vanilla extract 3 drops pink liquid food colouring *Cut copha into small blocks & melt in slow cooker, with vanilla extract, on high for 20-30 minutes, once melted add coconut & icing sugar to slow cooker & mix, then add whisked egg whites & mix (quickly) press half of mixture, into lined tray, then add food colouring drops to remainder mixture, mix thoroughly, then pour out over white layer of coconut, then put in fridge to set.
