Heres an easy meal you can make for family and guests. I usually make it for guests but last Friday, the cooking bug caught me after work ( stores had been closed so had to improvise... Came out ok.. I think youll enjoy it. You dont have to deprive yourself even when watching what you are eating. Enjoy red meat once or twice a week. 2-3 pounds pot roast beef 4 cups beef broth ( this one, I used water +Adobe) 2 cups cooking red wine 2 big red onions Rosemary and thyme sprigs ( didnt have some for this particular meal) Season the meat with sea salt and black pepper ( all around) On really hot pot, Sear the meat with olive oil all sides. Remove meat and chop onions in 1/2. Sear them as well (about 1 minute) Remove them. Add 4 cups beef broth (low sodium) let book 1 minute, then add 2 cups cooking red wine. Immediately , add your pot roast to that pan (Dutch oven) ( you can add any veggies you like at this point) Cover and put in preheat oven @ 275 for 2-3 hours. Once done. Take your uncooked broccoli and add it to the (soup) theyll cook with that heat and retain that green color. Enjoy!
