Heres my holiday cooking tip of the season. Tired of carving meat and having the juices drip all over creating a horrible mess:? Heres the solution. Put your cutting board on/inside a large cafeteria tray. Put a thin damp cloth or a damp paper towel under the board to keep it from sliding around when you cut. Let the meat rest for about 5 minutes after cooking, so more of the juices stay in the meat. Then slice away. When done, clean up is easy and your counter top is not a mess!!
