Balsamic and Honey Glazed Salmon Recipe courtesy: ChefAbilities Yield: 2 salmon fillets Difficulty: Easy Time: Prep 10 minutes, cook 15 minutes Glaze: ¼ cup balsamic vinegar 2 tablespoons honey 1 tablespoon stone ground horseradish mustard (or whole grain) ¼ teaspoon cayenne pepper ¼ teaspoon ground ginger ½ teaspoon coarsely ground black pepper 2 6-8 ounce salmon fillets Extra virgin olive oil Seafood seasoning (Old Bay) or seasoning blend (I used Trader Joe’s Seasoning Salute) Preheat oven to 425°. Drizzle fillets with olive oil and season on one side. Set aside. Place all the glaze ingredients in a small saucepan and cook over medium-high heat until it thickens into a glaze, stirring occasionally. Place salmon fillets on a parchment paper lined baking sheet (or foil sprayed with nonstick cooking spray) and cook 12-15 minutes until almost done. Remove them from the oven and set oven to broil. Use a pastry brush or spoon to coat the fillets with the glaze. Place under the broiler for 1-2 minutes or until glaze is bubbly and set. This is a great glaze for tuna as well. Adjust cooking time for thickness of fish fillets or steaks.
