Here’s the pan, and the meet. Almost 1 ¾ lbs beef loin roast. The plan is preheat pan with a little olive oil in oven. Bake at about 350º for 2 to 3 hours. (I am going out to get a thermometer cuz I tend to over cook things.) I thought some fresh onions, Mrs Dash (original) Salt, Pepper, garlic powder. Toss in some potatoes and carrots at some point. One question is, should I put in Fatty side up, or down? My thought was perforate it and fatty side up so it soaks back into the meet. Or do I want the fat down so it creates the moisture in the pan and self basting? I want this thing tender and falling apart. Maybe lower – slower? Any suggestions would be appreciated! I am off to the store for an onion and thermometer.
