Hi Folks, These next few weeks I am completing farm visits on our vendors. Every two years I pay a visit to see how things “happen” in their world. It’s such a great experience! I even bring our volunteers along when they are able. Not only do I get to know everyone a little better but I always walk away feeling so enthusiastic about what all these great people do for a living day in and day out. Take some time to talk to your farmers about their farming practices – they have such humbling dedication and a fantastic vision. Great recipe from Keswick: Strawberry Caprese Salad 1 lb strawberries, hulled and halved 1 cup fresh mozzarella, sliced (we recommend Caporella) 1/4 c. balsamic vinegar 1.5 tbsp olive oil 3 fresh basil leaves, finely chopped 3 fresh mint leaves, finely chopped salt/pepper Preparation To make balsamic syrup, in nonreactive pot, simmer vinegar over low heat until reduced to one-half its original volume (1/8 cup). In serving bowl, toss strawberries and mozzarella balls with olive oil. Season with salt and pepper. Add basil and mint; toss again. Drizzle balsamic syrup over and around salad.
