Hi Guys, This week’s Food of the Week is……………………………….. Beetroot (£1.00, Tesco). Beetroot belongs to the same family as spinach and chard, as both the leaves and the root can be eaten. The leaves have a very bitter taste, whereas the root is much sweeter. Typically, beetroot is a deep purple colour, but can also be found in a white or golden colour. Furthermore, beetroot is very often eaten raw, but is more typically cooked or pickled. Beetroot has exceptional nutritional benefits, especially the greens which are rich in calcium, iron and vitamins A and C. Beetroots are an excellent source of folic acid and a very good source of fibre, manganese and potassium. The greens should not be overlooked; they can be cooked up and enjoyed in the same way as spinach. Due to the high levels of sugar, Beetroot is an ideal ingredient to include in your post-workout meal. This is because it will provide you with the fast-absorbing carbohydrates that are needed to replenish the depleted glycogen stores you have following a tough workout.
