Hi all, I had a handful of requests for my chili recipe, so I figured Id post here. A couple of the ingredient amounts are VERY approximate (as I tend to eyeball most things). 3 cans of beans (black, kidney, small red) ~1.5 cups of corn 2 cans of diced tomatoes (preferably, Mexican stewed tomatoes) 1 onion (diced) 1 green bell pepper (diced) 4-6 cloves of garlic 3-4 tablespoons of chili powder 1 cup of vegetable broth 1 tablespoon of honey dash of cinnamon dash of cumin salt & pepper to taste olive oil 1) Heat olive oil over medium low and saute onion, green pepper, and garlic until onions begin to sweat. 2) Add spices and saute for another minute or two. 3) Add remainder of ingredients & fill pot with water until ingredients are covered. 4) Bring to a boil over high heat and then reduce heat to low. Simmer for about 2 hours or until liquid is thick enough to cover the back of a spoon. 5) Remove from heat and cool. Put into fridge for about 24 hours and then reheat the next day.
