Hidden Snowman Cake There are 2 cake recipes and a frosting recipe. Vanilla Cake: 11/2 cups all purpose flour 1/2tsp salt 1/4 tsp baking powder 1/4 tsp baking soda 1/2 cup unsalted butter softened (1 stick) 1 1/2 cups sugar 1/2 cup canola oil 2 eggs 1/2 cup buttermilk Preheat oven at 350 Spray 13x9x2 inch baking pan with nonstick cooking spray for baking. Set aside In a med sift together flour, salt, baking powder, and baking soda, set aside. If using a hand mixer, or a stand mixer, beat butter and sugar together until light and fluffy. About 3 min. Add oil and mix until well combined. Add eggs one at a time mixing well after each egg. Alternately add flour mixture and buttermilk on med low speed after each addition until well combined. Pour batter into prepared pan, spread evenly and bake 25-30mins or until top springs back when lightly touched. Let completely cool in pan on wire rack. Then freeze 30 min. Using snowman cookie cutter, cut out as many as you like. I like to use 8 for this cake. The rest can be iced and used elsewhere. Chocolate Cake 4 oz bittersweet chocolate very finely chopped 1 cup very hot brewed coffee 1/2 cup buttermilk 1 tsp vanilla 4 cups all purpose flour 1/2 cup unsweetened cocoa powder 1 tsp salt 3/4 tsp baking powder 1/2 tsp baking soda 11/2 cups unsalted butter softened (3 sticks) 3 cups sugar 3/4 cups canola oil 6 eggs Preheat oven at 350 Spray 10 inch tube pan with nonstick cooking spray for baking Place chocolate in a medium heatproof bowl.pour in hot coffee. Let sit for 2 min. Whisk chocolate and coffee mixture until smooth. Cool. Stir in vanilla and buttermilk. Set aside. In a large bowl, sift together flour, cocoa, salt, baking powder, and baking soda. Set aside. If using a hand mixer, or a stand mixer, beat butter and sugar until well combined. About 2 min. Add In oil and beat another 2 min. Add eggs one at a time mixing well after each one. Alternately, add flour mixture and chocolate mixture beating med low speed after each addition until fully incorporated. Increase speed to high for about 20 seconds. Pour about 1/2 chocolate battering prepared pan. Take snowmen and place head first into chocolate batter. Space the rest of the snowmen about 1/2inch apart. Take remaining chocolate batter and carefully spoon in and around snowmen until covered. Bake in preheated oven for 1 hour and 15 min. Check to see if done by using a toothpick in several ares of cake. If need to, bake additional 15 min. Remove from oven and leave in pan and cool on wire rack for 10min. Then invert pan and cool completely on wire rack. Marshmallow frosting 6 egg whites 11/2 cups sugar 2 tbsp light corn syrup 2 tsp almond extract Pinch of salt Combine all ingredients in a large heatproof stainless steal bowl. Place on top on small saucepan on simmering water. Do not allow Bowl to touch water. Using hand mixer, mix on med high speed for about 10 min until soft peaks form. Remove from heat and continue to mix another 2 min. Let cool. Once cake and frosting are cooled, using an offset spatula generously ice top and sides of cake. Let set for 10min and serve.
