Hold The Bacon! Is it me or are we trying too hard to shock our palates? Take bacon. It used to be served as a side with eggs as part of the morning routine. Comforting and tasty. It took center stage in a gorgeous summertime BLT, playing off beautifully against a juicy tomato and a crisp lettuce leave and a macaroni and cheese casserole glistened with bits of crunchy bacon that paired perfectly with oozing and melting cheddar cheese. BUT BACON ICE CREAM, donuts, cupcakes and even my beloved chocolate have now been baconized! Has bacon become the new essential ingredient we absolutely must put into almost everything? Ok, I get it about the karma of salty meets sweet but some food tastes are sacred and not meant to be “altered.” And bacon is one of those foods that we should eat really sparingly, what with all that fat and sodium we know it has. It just isn’t a miracle food. Bacon,that all American food cooked to crispiness and with just the right amount of salty taste has gone the way of truffles, truffle oil and foie gras. These ingredents seem to be in everything! That used to be garlic’s gig but judging from my visit to a few New York city restaurants and studying their menus, bacon is the new darling…even in luxurious tiramisu! So maybe I should just get over this desecration; instead of asking for bacon on my burger next time, why don’t I start a new trend? Maybe melted chocolate instead of cheese on my burger> MMM! MMM! Just like it is not good to fool with Mother Nature, it is even worse to fool with bacon.
