Holiday appetizers focus of workshop at the Seaside library Get in the holiday spirit with a holiday appetizer cooking workshop beginning at 1 p.m. Nov. 15 in the Seaside Public Library. Sponsored by The Friends of the Seaside Library, the workshop is limited to 20 people. Registration can be done at the circulation desk or by phone. Teresa Dufka, local chef and entrepreneur, will teach the workshop that will feature cooking instruction and hands-on demonstrations of three appetizers. Dufka will prepare gouda and beer gondue in toasty bread bowls with apples and pears, French cheese puffs, and sweet and spicy pecans and cashews. Attendees will have a full experience of prepping, cooking and serving the hors d’oeuvre and will receive a recipe book with simple how-to procedures. Dufka is a graduate of the Culinary Institute of America in Hyde Park, New York. She has been a chef at the Rockefeller Resorts, Le Normandie Massenet and the bakery chef at the Hilton Hotel in Portland. Dufka is the owner and chef of T.
