Hollow Mass Cakes ½ c olive oil 4 oz melted chocolate or cocoa powder 1 c sugar 4 eggs 2 tsp vanilla 2 c flour ½ tsp salt 1 c confectioners sugar Mix oil, chocolate, and sugar in a bowl. Blend in eggs one at a time, stirring one after another. Add vanilla, stir in flour, baking powder, and salt in oil mix. Chill overnight or for a couple of hours. Preheat oven to 350. Roll about a tbsp of dough into a ball. Drop balls into sugar roll until coated. Place balls on greased baking sheet. Bake 10-12 minutes. These were good, but I think I will use applesauce for the cakes next time. ~K
