Home from a mini break in Sitges near Barcelona and determined not to have a foodie anti climax so popped into Joes Farm Shop (again) for Sunday dinner inspiration - left with 2 pieces of Gloucester Old Spot pork belly - Its looking good! Wack the oven up really high and rub the meat with Maldon sea salt ground with fennel seeds and chilli flakes, drizzle with a little olive oil. Roast for 15 minutes then remove from tin and add some chunky cut vegetables such as carrots, red onions and leeks. Turn the heat down to 170 degrees and place the meat onto the veg and return to the oven. Cook for 1.5 hours. After 30 minutes add some boiled new potatoes to the pan than have been gently crushed with a meat hammer or rolling pin. Coat with pan juices and return to the oven. Serve with some green veg and a tart apple sauce. If the crackling isnt crispy enough for your liking remove the top section from the meat and return to the oven on high heat for 15 - 20 minutes to finish crisping up.
