How do you scale a service based economy when the average employee does not care? In an assembly line manufacturing world, time and motion plus quality testing bonuses helped. But how do you keep quality up at a Cracker Barrel on Thanksgiving weekend when every line cook couldnt care less whether the food was edible? You could fire them and hire new cooks but those wont care either. How does Cracker Barrel scale in a world where NO line cook exists that cares?
