I always knew that Bengals cuisine has had influence from many a culture Awadh being a very big influence . This influence was well established while I was engrossed in Adil Ahmeds Tehzeed - Culinary Traditions of Awadh. When I came across Piyau Bare something seemed very familiar and then I realized in Bengal a modified version is made and is called Rosh bora. Piyau Bare are luscious lentil fritters soaked a sugar syrup infused with saffron and Kewra water and served with cream. In Bengal the cream is left out altogether and the syrup is not infused with kewra water or saffron but I personally love this creamy version. Indulgence for Diwali indeed.
