I am a bit slow with recipes the last few days. It is so peaceful on the farm lately, yet small things keep me busy. Yesterday i took the staff for their annual Christmas shopping and 500 km later and 10 people in a van, i nearly lost it and it was a total nightmare as usual. It is done and that is important. I wanted to share this recipe before but forgot about it and was reminded about it yesterday by the following incident. While i was dropping the staff off i did some shopping for myself or should i say the farm, never have time for myself. They were selling hot Atchar on the street and i started to talk to a guy, saw his vehicle parked next to his stand was from KZN. He was telling me of this lovely Atchar his family makes, i love Atchar, and looked at the tubs. He were wiping them off, oil dripping.I didnt like the look of it, too much oil and left. Later i stopped at the local cash&carry and as i was loading my trailer i saw the Durban car and a guy running towards it with a 20 L drum of Atchar which he just bought at the cash&carry. I shouted at him: Nice family recipe!!! No egg French toast alla Durban Ingredients: 1/4 C chickpea flour 2 tbsp rice flour ~1/4C water 1/4 onion, diced finely 1/2 tsp red chili powder 1 tsp coriander-cumin powder 1/4 tsp turmeric 1/2 tsp mild masala Salt, to taste 4 slices of bread Directions Combine the rice flour, chickpea flour, and all the masalas (minus the onions). Add water little by little to remove the lumps and get a “milk like” consistency. Yes, the batter will be thin but that’s what you want. Add the onions and mix well Heat a pan over medium heat and spray with cooking spray. You could use oil. Dip the bread each side into the batter until it’s covered. You might need to press on the onions into the bread but that’s okay. Gently drop the battered bread onto the pan and cook until it turns brown and crispy. Flip gently and cook on the other side until it’s browned. Serve immediately with tomato sauce or a chutney of your choice!
