I discovered a healthy alternative to using bread crumbs in meatballs/meatloaf. I made these for dinner on Monday. This bowl is in the freezer for work Friday! Heres my recipe. For the meat balls. Meatballs 1 lb ground turkey or chicken. 1lb ground venison, moose, or other game meat** 4-6 slices of bacon, depending on thickness, ground or finely minced 1 egg 1 1/2 tbsp of CHIA SEEDS! 1 carrot grated 3-6 cloves of garlic, to taste, finely minced or use a garlic press 1-2 tsp red chili flakes, to taste 1 small onion, small dice 8 leaves fresh basil, chopped up. 1 1/2 tsp dried. Salt and pepper to taste 1+3 tbsp Extra virgin olive oil. Sauté onion in the first amount of evoo, until clear in a frying pan and set aside. While onion is cooking combine everything, except the chia seeds in a large bowl. Mix together by hand or with a large spoon with the cooked onions. Slowly sprinkle the chia seeds in as you mix. If you dump them all in they will stick and clump together pretty quickly. Figured that out the hard way. :) Once everything is combined I recomed throwing it in the fridge for an hour or two if you have it. ( here is where I suggest you fry up a piece of it to try and see if you like it and want to change anything) If not start making meatballs. I use a mini ice cream scoop. Theyre two bite meatball size. You can make them whatever size you want. Pull out your frying pan from the onions and throw in the rest of the evoo and set it to just over medium. You want it hot enough to sear the meat balls but not burn the oil. Sear them all over and remove to a roaster. Pour your favorite tomato sauce over it and bake covered at 450 for 1 hour. I smothered mine in a fresh red wine arrabbiata sauce. Serve with fresh grated parm! Good on their own or with your favorite pasta! Ive always followed other peoples recipies for meat balls and they turned out good so I decided to make my own with stuff I already had. Still ended up going to the store for ingredients for sauce anyway. I was impressed with how good they turned out and so was Jeremy. Definitly will make these again. **I realise not everyone has access to wild game meat. You can substitute for extra lean beef, preferably grass fed, locally available if you have access to that. I dont eat beef so I used something that I will eat.
