I do not make the classic mistake of only studying resources that confirm my own belief system. At the moment I am studying the vegan approach to controlling Type 2 diabetes. One thing is glaringly obvious - the people who recommend this approach do not know the difference between Glycemic Index and Glycemic Load. Glycemic load is what matters, glycemic index is barely relevant. Pasta, brown rice and oats have very little place in a Type 2 diabetics diet, they have moderate to high glycemic loads. What about legumes? Legumes have a low glycemic load but are loaded with natural toxins. We can eliminate most of these toxins by soaking and properly cooking our beans. So yes, eating controlled portions of beans is fine for Type 2 diabetics just make sure to soak them overnight and cook them until soft. Keep in mind that legumes are high in carbohydrate (about 75% of total calories) which is ultimately the main macronutrient we are trying to limit in order to fix our insulin resistance.
