I dont know if any of you remember my cornbread dilemma from a couple of weeks ago, but my husband has made a choice. He likes sweet cornbread, and I have made ten different recipes. He loves the one below. I do not remember who posted it, so if it was you, please claim credit. Preheat dry pan in oven at 425° Dice up 2 slices bacon, fry until crispy, remove bacon bits from pan and reserve bacon grease. Mix together dry ingredients, then add wet ingredients, then add extras. 1/2 cup self-rising flour 1/2 cup self-rising corn meal 1 teaspoon baking powder 1/2 teaspoon kosher or sea salt If you like sweet, add 1/4 cup white granulated sugar. 2/3 cup buttermilk 1 lg egg, beaten 1 tablespoon honey Mix together, add bacon bits, 1 shallot minced, 1 jalapeño minced. All extras are optional, use what you like. Remove pan from oven, drizzle with reserved bacon grease in each well, pour batter and bake 15-20 minutes. These are the right proportions for the round 8 piece corn bread pan. Good luck. I did not use any extras and I used AP flour instead of SR flour. I did use bacon grease, and 1/4 cup sugar. Awesome cornbread!! Very close to Jiffy, IMO. The picture is my red beans and rice with the cornbread on the side.
