I guess I should let some of you know what Ive been doing with my life. Ive left The Culinary Institute of America for a variety of reasons, and went to live with my mother and stepfather in Sterling, Virginia. Ive been taking it pretty easy for the last two weeks until today. Today I went into Washington D.C. on a business excursion. 4 buses and 3 trains later, I caught up with the chefs at both The Hamilton, where I did my work experience, and 1789, which was going to be my externship site. Both of these restaurants are part of the Clydes Restaurant Group. Heres my predicament: they both offered me jobs as a line cook. The Hamilton is a restaurant that I worked at for 1 year, so I know the people, and all the ins and outs of the place. They serve very good food at a high volume of production, have lots of great live music, and would like to start me on the hot line. Additionally, Id be working lunch service, and would have a rather stress free commute. 1789, however, is a more prestigious and formal restaurant that serves what many consider to be a high caliber of cuisine. Id have the opportunity to work with higher end ingredients, many of which Im not even familiar with. Their main focus is not on putting up orders at a blindingly fast pace, but on precision, as it is a smaller restaurant; they have between six and seven line cooks per service, rather than the 15-20 that The Hamilton has per service. 1789 would start me on salad station, with the chance to move up to hot apps, and possibly beyond. Theres also a greater sense of camaraderie among the employees, where as The Hamilton could be clique-ish at times. Lastly, both chefs were happy to see me, but the chef at 1789 was somewhat emotional at how badly he wanted me to work for him. 1789 sounds like the clear choice right? Well heres the biggest issue: transportation. Even with me having a drivers license now, I am still unsure of how Id get there. Theres no where close by to park, and using metro would be a challenge. If 1789 offered lunch service, there would be no issue, as I could use metro both ways. However, they only do dinner service, so Id be getting off around 11, and I do not know of any buses in my area that run that late. I guess this is an issue of whether or not Im willing to leave my comfort zone. Im sure I could make transportation work if I really put my mind to it.
