I had a craving for roasted chicken and veggies so had to do it. Made a bed of onions, green and red bell peppers, squash, and carrots. The chicken was washed and dried and filled with rosemary, thyme, garlic, butter and topped off with sea salt and garlic pepper. The taters and rest of the veggies were drizzled with Olive Oil and a sprinkle of sea salt. 20 mins at 475 and then 400 for 45 mins. Take out and let rest for about 10 mins then carve. The meal was a hit with the family. Life is good!
