I have a batch of these cooling down in the fridge awaiting cooking and taste testing later today. Thanks to Kristen DeBragga, I am now addicted to the Trader Joes Triple Ginger cookies and these are supposed to taste just like them. We shall see. This is the first time I have baked anything from scratch in forever. I have pretty much just given up on the things that I used to enjoy out of life over the last couple of years since I started fighting Fibro. This week I got a bit of a wake up call when I had to go to the hospital with severe chest pains and irregular heart beat and thought I was having a heart attack. Turned out to be an inflammation in my chest wall that was causing the issue, but it did give me a moments pause. I want to LIVE life again, not just float along on the surface. So, I am going to start doing things that used to bring me joy. I am tired of letting my condition dictate my condition. So here we go.
