I have been crazy for and making healthy low carb one minute muffins(OMM) for breakfast every day lately changing up flavors with fresh blueberries or strawberries. Now, I am going to try a chocolate muffin using P96! Recipe: using a coffee mug, mix dry ingredients: 3tbsp of ground flax, 1tsp of baking powder, a tsp or tbsp of powdered stevia. Add 1 egg, 1 tbsp EV olive oil, a splash of vanilla extract (I use about 1/4 cap full), add your berries or P96, mix well(becomes batter like consistency) Microwave on high 65seconds. Remove cup from microwave, run butterknife around edges to loosen, turn cup over to allow muffin to fall out onto plate. It will be very moist. Let sit about 5-10min to cool (the longer it sits the better the texture). Now eat with your spread of choice(cream cheese, butter, pb, sugar free jam) ENJOY!! Let me know what you think. You can also make these savory dinner muffins by nixing the vanilla and sweetener and using herbs and shredded cheese.
