I have been processing one of my deer today, after aging it in the frig for about 2 weeks. It is a lot of work, but the reward is worth it. ( I have processed most of my deer, most of my hunting life. Every once in a while, I will carry one to the processor, if I kill several deer in a day or I have something to do, that prevents me from getting to the deer in a timely manner, other wise I do it my self.) Out of todays deer, I got: 5 roast, 5 bags of tender loin, 7 bags of steak, 9 quart bags of ground deer. All of the ground deer came from parts that a lot of people, that I know, throw away.( the flank meat, the deboned ribs and the leg shanks.) i try to use all of the deer that I can, it really helps on the gro bill.( the pic is the ground deer from the parts that many throw away, 9 quart bags full.)
