I have several request to post my recipe for Cheryles Smothered Bake Potatoes so here it is: 1 lb. of ground Buffalo (you can use extra lean ground beef, ground Italian sausage, or ground turkey) 1/2 medium to large Sweet onion (I used Walla Walla but I prefer Vadalia when I can get them) Dried Basil, Italian Seasoning, Garlic Powder, and any other herbs you may want to use. I do not measure.. Just add to taste. 1 Medium can Tomatoe Sauce 4 Baking Russet Potatoes, well scrubbed Shredded cheese-I use Medium Cheddar or Montery Jack 1 dollop of Sour Cream (can use fat free Greek Yogurt, Plain) Sliced Jalapeños Chives Optional: Salsa, or try a can of Petite diced tomatoes In a large skillet brown the ground meat with the onion and herbs until the onion is translucent and tender. Drain if need be. While the meat mixture is browning, cook the potatoes in the microwave until tender. Add the tomato sauce and tomatoes, if using, to the meat mixture. Simmer until heated through, then remove from heat. Cut the Potatoes in half lengthwise and make slices partially in them. Spoon the meat mixture over the hot potatoes and sprinkle with cheese, add Jalapaenos and a dollop of the sour cream. Sprinkle with chives. If you use Salsa, you can either add it to the meat as it is browning or you can add it on top of the potato. Enjoy and have fun trying different Herbs and Spices.
