I invite you all to consider Saturated fats for a moment so we can clear up the misconceptions. Saturated fats are not the demon. Lets take a look at given their long history of use in indigenous cultures. Agriculture has only existed for about 10,000 years prior to which humans were hunter gatherers. We subsisted of wild game and prized the organ meats which are high in fat and thus high in Vitamin D.These foods provided ample amounts of fat soluble vitamins and resulted in children being born without crooked teeth (as we see in todays agricultural dominant society). Our wisdom teeth for instance, are biologically supposed to be able to fit in our mouth and it was not until the rise of agriculture that we began to be unable to fit these teeth in our mouth. Our jaws shrank as a result of eating hybridized food lacking in photo chemistry. Dr. Weston Price a dentist from the 19th century has documented the dental structure on indigenous peoples who ate a diet rich in wild foods including rich sources of fat. Also, Polyunsaturated fatty acids (like what is predominantly found in Canola oil) have vacant bonding sites, which allows it to become oxidized, acting like a free-radical inside your body. Cooking in these oils actually contributes to cardiovascular disease. Saturated fats do not carry this problem because they are "saturated" (all their bonding sites are occupied, so they are chemically more inert). Of course, you still want these from good sources--wild and organically raised plants, wild and free-range animals eating biologically appropriate foods. Additionally polyunsaturated fats are extremely high in omega 6 which promotes inflammation and communing a diet high in domesticated grains has resulting in an unfavorable ratio of omega 6 fatty acids to omega 3 fatty acids in the Western diet of today. While wheat has a high protein content compared to rice and such, it also has many allergens aside from the most common (being gluten). Saturated fat is certainly not the cause of cardiovascular disease and there is literature to confirm this. Many of the studies of cardiovascular disease being induced by saturated fats were pushed by drug companies years ago also.You should not shy away from the butter and meat so long as it is obtained from grass fed sources as apposed to grain fed.
