I keep some basics in my pantry for lo-cal, healthy but flavorful cooking. One of my secret staples is Ken’s Lite Raspberry Pecan Salad Dressing – 30 calories for 2 tablespoons. Sure I use it on my salads. But I also: • use it as a marinade for grilled chicken strips: I buy chicken breasts, debone and deskin, cut into long strips, marinate, sprinkle on lemon pepper, bake at 400° for 30-45 min, then freeze. The chicken is ready to thaw for salads, wraps, or even as the main dish with a side of veggies and rice • as a marinade for salmon or tuna steaks: make sure it’s a meaty fish that won’t disintegrate in the marinade • drizzle on freshly cooked meats or fish as a topping – I warm it up in the micro first, then drizzle • splash onto freshly cooked green beans or asparagus for a zippy flavor What’s your secret healthy cooking ingredient? #stopeatingcrap
