I love this recipe. Home made granola bars. Its not always easy to find locally sourced ingredients but you can find small local businesses that stock what you need. Plus, I make 15 granola bars for roughly the same price as you pay for 5 in the store. The ingredients are interchangeable as well, heres some suggestions: Ingredients: 2/3 cup raw honey/maple syrup/coconut syrup 1/2 cup of sunflower/camelina/liquid coconut oil (or whatever oil you prefer) 1/4 cup light brown sugar/coconut sugar 2 1/2 cups of rolled oats or mix that quantity with quinoa flakes 1 cup puffed buckwheat or amaranth 1/2 cup coconut 1 tsp cinnamon 1 cup of mix ins (try a combination of you favourite things: cocoa nibs, cranberries, raisins. chocolate chips, crystallized ginger) 1/2 cur raw cashews, coarsely chopped or sunflower seeds if you prefer a nut free option Method: Preheat oven to 275 degrees F and line a 9 x 13 baking tin with parchment paper Put honey/syrup, oil and sugar in saucepan over medium heat, stirring until well combined. Mix the remainder of the dry ingredients into a bowl and add the honey mixture, stir. Press into the lined tin, use the back of a spoon to press down firmly. Bake for 40-50 minutes. Allow to cool before cutting into bars. *Adapted from a recipe from the Supergrains cookbook by Chrissy Freer.
