I made Kung Pau Chicken tonight, one of my favorites! Here are photos and the recipe: Kung Pau Chicken Combine the following: 1Tablespoon cornstarch 1Tablespoon sherry 1/2 teaspoon salt 1/8 teaspoon pepper 1 Tablespoon oil Cut 1 1/2 pounds boneless chicken breast into bite size pieces and marinade in the above mixture for about 15 minutes. Combine the following and set aside: 4 Tablespoons soy sauce 2 Tablespoons rice wine vinegar 2 Tablespoons sherry 1 cup chicken broth 4 teaspoons sugar 4 teaspoons cornstarch 1 teaspoon garlic powder 1 teaspoon ground ginger Cut up 4-6 red hot chili peppers, (or you can use red chili pepper flakes, as spicy as desired), sauté in 2 Tablespoons oil along with 1/2 cup to 1 cup peanuts, add chopped onion, celery, water chestnuts and whatever veggies you prefer. I sometimes add zucchini. Cook until onions are tender. Take out of pan and set aside. In the same pan, cook chicken until done then add the soy sauce mixture and the pepper/peanut/veggies to the pan, stirring constantly until sauce thickens. Add more chicken broth if necessary. Serve over rice. Enjoy!😊
