I made a really good squash soup the other day & I want to share the recipe: its a rich, hearty, delicious concoction... Lets call it Squash Bisque: 》Roast 2 Butternut Squash & 3 Acorn Squash at 350, covered with foil, and about an inch of water in the pan, for at least an hour. Youll want the squash to be nice and soft. When its done, the skin should easily be removed. 》Dice & Sautee half of a sweet onion in a few tablespoons of butter until transparent. 》Combine the squash and a brick of cream cheese in a large mixing bowl and use electric beaters or a food processor to puree to a smooth consistency. Add 1-2 cups of vegetable broth to blend easily. 》In a large pot, add the squash puree, the rest of the container of vegetable broth, sautéed onions, a cup of heavy cream, 1/4teaspoon of cinnamon and a little pepper. Cook on medium heat for about a half hour & Voila~ ☆Hope you enjoy!!
