I made baked peaches with coconut whipped cream tonight. Cut the peaches in half and pit them, add a pat of Kerry gold butter, drizzle with honey, and a shake of cinnamon... bake at 350 for 40 minutes. Meanwhile scrape the cream off the top of a chilled can of coconut milk, put it in a bowl with vanilla extract, cinnamon, and honey and whip on high speed for about 5 minutes with a hand blender. I put the whipped cream in the freezer cuz I really wanted to feel like I was eating ice cream. Haha. It was a delicious paleo dessert.
