I made this recipe tonight and it was one of the best soups Ive ever had! I did make a few adjustments which Ive note below. I promise that if you make those adjustments youll love it! Curried Red Lentil, Kale and Sweet Potato Soup Yield: 5 servings Ingredients 1 tbsp olive oil 1large onion, finely diced ½ jalapeno, seeded, diced- I would use a whole large one 2 tsp grated ginger-I used 2 but wasnt enough so I added some powdered (will use about 2TBSP of fresh next time) 1 large garlic clove, minced- used 2 2 tsp curry powder-no way near enough...we kept adding..start with 3Tbsp and go from there 1 tsp salt 3 tbsp tomato paste 5 cups water 14 oz light coconut milk-I used 1 can of regular...its delish and would use 2 cans next time :) 1 cup red lentils-I used a mixture that I have from Costco (3 colors). 1 medium sweet potato, peeled and diced into ½-inch cubes-gotta go for 2 sweets! 2 bunches lacinato kale, stemmed and coarsely chopped-had no Lacinato today so I used alot of the regular kale 2 tbsp minced cilantro-awww what the heck...double it! Instructions Heat the olive oil in a large pot. Add the onion and cook over medium heat. Add a pinch of salt and cook for about 5-8 minutes, or until onion becomes tender. Stir in the jalapeno, ginger, garlic, curry powder, and salt. Stir for about a minute, stirring frequently. Add the tomato paste and cook for about 2-3 minutes, or until it starts to darken in color, stirring constantly. Add the water, coconut milk, red lentils, and sweet potato. Bring to a boil, and then lower to a simmer. Cook, partially covered, until the sweet potatoes are tender and the lentils are cooked through, about 30 minutes. Stir in the kale and cook for about 5 minutes, or until wilted and tender. Stir in the cilantro and serve.
