I made this simple and tasty spread to day! At the finish taste was very good, now to let it sit in the refrigerator over night and let it meld together. You could use a little 1/2 & 1/2 to thin it to a dip fi you want! Enjoy! Caramelized Onion & Chive Cream Cheese Prep Time: 5 minutes Cook Time: 25 minutes Total Time: 30 minutes Yield: 1 1/2 cups (approximately) Serving Size: 2 tbsp cream cheese mixture Ingredients: 1 large yellow onion, thinly sliced 1/2 cup warm water 12 oz. low-fat cream cheese softened 1 tbsp finely chopped chives 1/8 tsp salt pepper to taste Instructions: Heat a large saucepan set over medium heat. Coat with cooking spray. Add the onions and cook until softened, about 10 minutes. Add 1/2 cup stock or white wine, cover the pan and cook until the onions are golden brown, about 15 minutes. Remove 1/2 cup of the caramelized onions to a cutting board and chop. Let the chopped onions cool. Place the creamy cheese in a medium-sized bowl and whip with a hand-mixer until fluffy, about 20 seconds. Stir in the caramelized onions, chives and salt. Serve or store, covered, in the refrigerator.
