I may have invented a very nice tuna salad nicoise variant. Around the outer ring of your platter all the salady items you would expect - leaves, cucumber, toms, basil, olives and anchovy; in the centre well, a layer of sliced sauteed new pots (par boil and fry), then your green beans, then seared fresh tuna (Waitrose do frozen which is really good at about £11 kilo), sliced spring onions, topped with a poached egg. I promise you it is a bit of a treat...
